1 1⁄2 cups whole oats
1 cup all-purpose flour
1 tsp baking soda
1 tsp salt
1 cup (2 sticks) butter, softened
3⁄4 cup granulated sugar
3⁄4 cup packed brown sugar
1 tsp vanilla extract
2 large eggs
2 cups raisins or dried cranberries
Preheat oven to 375F.
Combine flour, oats, baking soda, and salt in a small bowl.
In a standing mixer, beat softened butter until creamy. Add granulated sugar, brown sugar and vanilla extract and beat til fluffy. Add eggs, one at a time, beating well after each addition.
Gradually beat in flour/oat mixture.
Stir in raisins/fruit. Drop by rounded tablespoons onto ungreased baking sheets.
Bake for 9 to 11 minutes or until golden brown. Cool and share.
